Eclair Cake

Hope everyone had a great weekend and all the father's out there had an amazing day! Our gift today to The Husband was us going to church, and then lunch with my family. He was able to sleep all day long without interruption from the Princess or little man. For lunch I was asked to bring dessert and since here in the middle of California we have hit summer, meaning 95+ degree weather I decided to make something a bit light. I went with my Eclair cake.

Needed:

1 cup of water

1/2 cup butter

1 cup self rising flour

4 eggs

2 small boxes vanilla pudding

1 package cream cheese

1 large tub of cool whip

chocolate syrup

chopped nuts (optional)

Directions:

*Preheat oven to 400 degrees.

*Bring to a boil the water and butter, adding the flour all at once. Remove from heat. Form into a ball. Let cool a bit.

*Add the eggs one at a time to the dough. Make sure the dough is cool though, it will cook the eggs.

*Spread on a cookie sheet, the kind with short sides. It will look like there isnt enough, but its ok if its thin, the flour will help fill it out.

*Put into the oven for 30 minutes.

*In a bowl mix the pudding according to directions, mixing in the cream cheese.

*Once the crust is done cooking, pull out and let it cool.

*Add the pudding mixture to the crust, putting it into the fridge for about 20 minutes. Then add the cool whip, topping it with chocolate sauce and nuts if you choose.

Happy Father's day to a wonderful husband and father!
